FEATURE OVERVIEW:

Germinated every minute
The DX 500® is beside the DX 1000® the first Dry Aging fridge worldwide, which has integrated an activated carbon filter combined with an active UVC-ventilated-disinfection system, which sterilizes all of the air in the fridge every minute. As a result, germs and bacteria don’t stand a chance.

Precise regulation of humidity
This is unique: The DX 500® works together with the bigger DX 1000® without any water-supply: The humidity can be adjusted in 0,5 % steps from 60 to 90 % thanks to HumiControl® system. This, together with the integrated DX AirReg® system even with large fluctuations in the ambient temperatures are always a perfect microclimate inside, an optimal air flow and a continuous disinfection.

Full electronic temperature control
When Dry Aging, we recommend to dry-age the meat on the bone, at about 82 to 85 % humidity and a temperature of 1 to 2 °C. The precise electronic of the DRY AGER DX 500® guarantees the constant maintenance of the temperature, which can be regulated in precise 0.1 °C increments from 0 to +25 °C.

Very low weight loss
German-Made Dry Aging technology – your benefit:
The weight loss in the DRY AGER® is surprisingly small! Beef loses after 4 weeks on the bone only approx. 7 – 8 % and after 6 weeks only approx. 12 %. Pork loses after 3 weeks only approx. 9 – 10 % in weight.

Maximum flexibility
The DRY AGER® is not only limited to dry aging beef, but can also be used for the production of charcuterie, air drying cured ham and many other meats, as well as storing cheese.

Perfect UV protection
To protect the valuable contents from harmful UV light, an elegant stainless steel frame held insulating door of the DRY AGER® is tinted (metallized).

In recent years, there has been a pleasing trend in meat consumption and a focus on quality by the consumer. Good meat, instead of mass produced, is sought after. Traditional sourcing methods are also re-evaluated. A very special flavour and experience is produced by the dry aging process, ie the dry maturing of meat. The DRY AGER® from Landig + Lava has been developed with advanced technology. 5 patented systems make it possible to mature in safe, hygienic conditions.

The precise electronic control ensures a constant temperature (from 0 to +25 ° C) that can be controlled in precise 0.1 ° C increments. Thanks to the HumiControl®, the humidity can be controlled very precisely in 0.1% steps of between 60 and 90%, without the need of water connection. Dry-Aged Beef is literally the way to go, from the high end restaurants to the street food truck. The English term simply means “dry maturation”. Actually a well-tried method, also known as "well hung". The meat becomes exceptionally tender and flavoursome. This is why it is so popular. With the DRY AGER® DX 1000 meat maturing refrigerator from Landig, this traditional process has been revived.

Now the engineers in Bad Saulgau (Southern Germany) have built, using all the technology in the pioneering model, a smaller version: the DRY AGER® DX 500. This professional unit is suitable not only for beef but also for pork, lamb, or venison and for the production of sausages such as salami or ham. In the commercial sector, the refrigerator (retail price approx. € 2,695.00) will pay for itself after just 2 full loads and is therefore an extremely worthwhile investment.

 
The technology
For the dry-aged method, the meat is matured for 3 - 6 weeks on the bone. The most important criteria is the ambient climate. Only at a temperature around the freezing point and about 80 to 85 % humidity will fresh beef become dry aged beef. Otherwise, the meat threatens to spoil. The DRY AGER meat maturing refrigerator allows you to control the conditions exactly.

The HumiControl® system can be controlled precisely from 60 % to 90 % by means of sensitive electronics. The integrated DX AirReg® system ensures a perfect ripening climate and a continuous sterilization in the unit, even in the case of major fluctuations in the ambient temperature.

The DRY AGER®, thanks to ingenious, state-of-the-art technology, does not have a water connection or a water container. This considerably reduces the number of germs in the appliance and makes handling even easier.

The stainless steel frame is easy to keep clean and provides a good visual adjustment in the kitchen / retail-area with an appealing design.

Tinted insulating glass doors (metal-vaporized) protect the meat against harmful UV light.
